Fruit for our Country Wines is either
grown in our own orchards or sourced locally wherever
possible. Still in keeping with tradition we have
eschewed the modern spindle and piston presses that
press fast, but at a lower quality in favour of a press
that mimics the actions of the human foot.
As all our Country Wine fruits are soft, there is no
need to pulp them first as with the apples. The Apple
Press is also far too brutal and would leave too many
bitter substances in the juice. Our pistonless Wine
Press which has a rotating sifting drum operates using
compressed air and produces a juice free of bitter
substances (stalks, pips, fruit skins) which is a basic
requirement of good wine.

| The flexible walling of
the press skin adapts itself even better than
the human foot to he unevenness and the varying
thickness of the fruits. The compressed pressure of 300t
would correspond to the body weight of about 4000
people. |
As the flower is used, as opposed to the fruit, for
production of our Elderflower Wine, a very
different method is used. Firstly the flowers are picked
in full sunlight to capture the greatest aroma and then
carefully combed off the stems before steeping in our
own Spring Water. |
