CORNISH APPLE BRANDY
As part of the Cornish Cyder Farms millennium project,
ambitious plans were developed to produce Cornwalls
first brandy in over 300 years. The result is a highly
collectable, limited edition Cornish AppleBrandy.
The 2000 vintage was created entirely from apples from our
own orchards that were harvested in the year of the eclipse.
It has been maturing in Oak barrels for 4 years in our
purpose built cellars at Penhallow.
This brandy is the very first release from our still. It is
identified with both a bottle and barrel number. This virgin
run produced only 10 barrels that will be released
individually over a number of years, making for a truly
unique and special product that can never again be
re-created.
The 2001 vintage is now available for sale in 2005. This
was made in exactly the same way as our 2000 vintage and is
proving to taste just as special.
To ensure the brandy remains in perfect condition it should
be stored in a cool, dry place. Natural clouding and slight
sediment may occur that can be dissipated with a gentle
rocking of the bottle. Care should be taken when using a
corkscrew to uncork the bottle. We would suggest using a
corkscrew that does not require pressure on the rim of the
glass.
The comments of Jim Murray, a world authority on spirit
blending, convinced us that this product was, beyond doubt,
at the perfect stage for release. An extract from his expert
opinion follows.
An elegant and unique Cyder Brandy boasting a
refined and unique taste that will gently arouse the senses
and then slowly explode in the mouth - be prepared for the
taste of effervescent fruit, bitter sweet chocolate, sweet
but not too sweet with an aroma of scrumpy with a lush and
tangy note. The oak adding a hint of a great rye and fine
bourbon. A brandy not to be compared with spirits made from
the more traditional fortified grape. This is something
extra special - a spirit to be savoured and talked about for
a long time. Enjoy!

CORNISH EAU de VIE (SPIRIT of LIFE)
Our unique Cornish Eau De Vie, is made from a selection of
our cider and fruit wines. These are distilled slowly in
order to preserve the aromatic qualities of the wines and
distilled not just once, but twice.
The first distillation produces a very fruity liquid of
around 28% abv. This is then distilled a second time to
produce an eau-de-vie which is around 70% abv and is
entirely colourless.
The skill of our distiller is only to keep the heart of
this second distillation, leaving the heads and tails to be
distilled again in a subsequent batch. This ensures that
only the purest spirit passes to the next stage. We then
blend this pure spirit with water from our own spring to an
abv of 25%. An Eau de Vie to savour chilled. It is unique on
the palate, and you will taste, in its clear
transparency, the flavours of the wines and cider that gave
birth to it.
Enjoy it neat or on the rocks like a schnapps or vodka. Mix
it with your favourite fruit juice or cordial for a long
refreshing drink. Use it as an ingredient in a cocktail, as
well as with a dessert or incorporated to pastries, fruit
salads and sorbets.
Our current varieties include Apple, Plum and Elderflower
Eau De Vie.
CORNISH WHISKEY
Working in partnership with St Austell Brewery, we have
embarked on a new project to make the first Cornish Whiskey
ever produced in Cornwall. Using Cornish barley, the brewery
made the beer or mash (as distillers call it)
and we have distilled it in our unique copper still. The
result is currently maturing in our purpose built cellars,
sleeping quietly alongside our Cornishapplebrandy and
Cornish Eau de Vie.
